Date of harvest: First half of March
Yield: 60 quintals per hectare
A selection of bunches and grains is made. Cold maceration for two days. Alcoholic fermentation with indigenous yeasts, for 7 days at a temperature between 26 and 28oC. With three daily pump-overs according to the winemaker’s tasting.
Post-fermentation maceration for 10 days. Malolactic fermentation: 100% spontaneous to increase complexity in the nose and smoothness in the mouth. Aging: 8 months in first and second use French oak barrels.
Tasting Notes
It has a great coloring intensity with red and black tones. It presents aromas of plum jam, blackcurrant and white pepper on the nose. Very complex and powerful due to its time of harvest and aging in wood; highlighting the notes of cloves, vanilla and tobacco. The palate is structured with sweet tannins.
Serving Temperature
17 – 19 oC.
