A selection of bunches is made, the broom is removed and then it is incubated. A cold maceration is carried out for 48 hours. Classic fermentation with indigenous yeasts at a temperature between 26 and 28oC during post-fermentation maceration, the decube is defined and pressed by tasting. Malolactic fermentation is carried out with indigenous bacteria. Then it is kept in contact with French oak for 10 months.
Tasting Notes
Intense and bright violet tones are observed, aromas of fresh red fruit are perceived on the nose, there are notes reminiscent of violets and slight notes of tobacco and chocolate. The palate has an elegant entrance is fresh, complex, has a good palate invites you to take a second glass.
