Winemaking

Variety: 100% Pedro Ximénez.
Vineyard location: La Consulta, Valle de Uco, Mendoza.
Altitude: 1100 meters above sea level
Soil type: Loam with pebbles.
Irrigation: Traditional furrow.
Harvest: Manual.
Date of harvest: First week of April.
Malolactic fermantation: With indegenous yeasts.
Aging: 70% vessels – 30% in french oak barrels of first use.

A selection of clusters is made, accompanied by dry ice, through pneumatic press, making a very soft pressing, followed by a cold overflow. Finally the alcoholic fermentation is carried out at low temperature, with a strict care of the lees accompanied by periodic Battonage. This combination with its 30% volume in French oak barrels gives us a wine with a perfect balance between natural acidity and mouth center.

Tasting Notes

It has a soft yellow color with steely and greenish tones. It immediately highlights its aroma of white flowers, in addition to some citrus expressions, such as grapefruit, which the Uco Valley gives us. In the mouth its freshness is distinguished with a balanced acidity and the complexity granted by its 30% fermentation and aging in French oak of first use. It is a distinct, fresh and intense white wine.

8 – 10 ºC.
